Tasty Cumberland Pie

Cumberland Pie dates to the 18th century. Consisting of different veggies, meats, fruits and spices this is a real treat in the UK. Lots of people confuse this dish with Shepard’s Pie or Cottage Pie. This mistake is often made because of the body of the pie, but in each dish, the recipes vary. The main difference is the meats that are used in the pies.

So, the ingredients you will need are:

  • Beef Meat/Mince Beef- Cubed/850 Grams
  • Celery- 3 Sticks, Sliced
  • Onion- 1 Large, Chopped
  • Carrots- 2 Large, Halved and Chopped
  • Potatoes- 5 Large- Chopped, Boiled and Mashed.
  • Mushrooms- 10-15 Medium, Chopped
  • Tomatoes- 5 Large- Chopped
  • Bay Leaves- 3
  • Thyme- 1 Bunch
  • Vegetable Oil- 2 Tablespoons
  • Butter- 1 Tablespoon
  • Plain Flour- 2 Tablespoons
  • Beef Stock- 2 Cubes
  • Vegetable Stock- 100 ml
  • Cheese- 250 gram, Grated Cheddar
  • Hot Water- 600 ml

Once you have all these ingredients, it is quite simple to make this pie. First, your oven should be preheated to 180C. In the meantime, place a casserole on the stove and add in your oil, and butter. Allow the heat to melt the oil and slowly add in your chopped onions, carrots, mushrooms and tomatoes. As these begin to colour a little bit, add in bay leaves and thyme, and stir until a soft blend has been made.

Then gently add your flour and stock to this good-smelling mixture. You will see that the mixture will become like a thick dough, just drop in some hot water. Once you have a thick-like blend, put in your meat and allow it to boil for around an hour. Then simmer for at least 30 minutes until the sauce becomes thickened, and do fork-in the meat to check if it is tender enough.

If the meat is cooked enough, add in your potatoes, vegetable stock and half of the grated cheddar in this beautiful mix. Finally add the mixture in an oven dish, but make sure to remove the bay leaves! You wouldn’t want those to stick on your teeth. The final touch would be to lay some left-aside potatoes on the veggie and meat mix, and to spread the spare grated cheese on the potatoes.

Allow this amazing pie to cook at 180C for 30-40 minutes. Do keep checking if the top is gold and crisp, as that’s when it is ready.
